Cheddar and Chive Cornmeal Waffles

These cheddar and chive cornmeal waffles make a great addition to a savory breakfast or anytime meal.

Ingredients
  

  • 2 Eggs
  • 1 1/2 cups Milk (non-fat is fine)
  • 1/2 cup Sour cream (Non-fat fine here too)
  • 2 Tbsp Butter (melted)
  • 1 2/3 cup Cornmeal
  • 1 cup Gluten free 1-1 baking flour
  • 1 Tbsp sugar
  • 1 tsp Salt
  • 1 Tbsp Baking powder
  • 1 tsp Paprika
  • 1/4 cup Chives (chopped)
  • 1 cup Extra sharp cheddar cheese

Instructions
 

  • Preheat waffle maker.
  • In a high powered blender, blend together eggs, milk, sour cream, and melted butter. 
  • Add in cornmeal, flour, sugar, salt, baking powder, paprika and blend until incorporated.
  • Place chives and cheese in the blender, and give a quick pulse to mix.
  • Spray waffle iron with non-stick spray or olive oil.
  • Use a large cookie scoop to portion batter onto the waffle iron. Close the lid and cook for 4-5 minutes. Waffles are done when they are golden.
