Cheddar and Chive Cornmeal Waffles

- 2 Eggs
- 1 1/2 cups Milk (non-fat is fine)
- 1/2 cup Sour cream (Non-fat fine here too)
- 2 Tbsp Butter (melted)
- 1 2/3 cup Cornmeal
- 1 cup Gluten free 1-1 baking flour
- 1 Tbsp sugar
- 1 tsp Salt
- 1 Tbsp Baking powder
- 1 tsp Paprika
- 1/4 cup Chives (chopped)
- 1 cup Extra sharp cheddar cheese
Preheat waffle maker.
In a high powered blender, blend together eggs, milk, sour cream, and melted butter.
Add in cornmeal, flour, sugar, salt, baking powder, paprika and blend until incorporated.
Place chives and cheese in the blender, and give a quick pulse to mix.
Spray waffle iron with non-stick spray or olive oil.
Use a large cookie scoop to portion batter onto the waffle iron. Close the lid and cook for 4-5 minutes. Waffles are done when they are golden.
