Keto. I thought it would have run it’s course by now. Three years ago, I did Keto and have since put all my weight back on. I guess that’s what happens when you love to bake! But Keto can be a lifesaver to a lot of people. For those who are morbidly obese and need to lose weight quickly, or for people with PCOs, like myself, that feel like every diet has failed them. I’ve been trying to lose weight again, and the easiest way for me to do that is to cut my sugar intake. But, I still have a giant sweet tooth, so I came up with these Keto Peanut Butter Cups.
These Peanut Butter Cups were actually created by accident and out of necessity at the same time.
Let me start by saying that I love Lily’s Chocolate. It is by far my favorite, and one of the only sugar free chocolate brands out there. I was out of chocolate chips, and decided to order some from Target, via the mail, during a pandemic. Not thinking that it was May in Michigan, where temps hit 80+ degrees daily, the mail is delayed and moving at a snails pace, and it’s probably even hotter elsewhere in the country where the chocolate was coming from.
Needless to say, all the chocolate I ordered showed up at my door as bags of liquid. Target was great about it. Their customer service was so accommodating and gave me my money back, while telling me to either keep, donate, or trash the product. Trying to not waste food, I threw the bags of melted chocolate into my freezer, hoping to salvage them.
Except, I got bricks of chocolate.
Not a whole lot I could do with them, when I was expecting chocolate chips.
Then it dawned on me. Well, really, I had more of a PMS epiphany. I could melt the chocolate back down and make sugar free peanut butter cups!
So that is what I did. Melted the chocolate back down using a double boiler, Coated an Ikea silicone ice cube tray with the melted chocolate, put some of my homemade natural peanut butter in the middle, and topped it off with more chocolate.
My partner has been following Keto for the past year. He tried one of these and the first words out of his mouth were, “Those are dangerous.” They’re that good friends!

I am not going to calculate out the macros on this recipe. A rough estimate on my end is somewhere between 5-7 net carbs per square. The amount of chocolate will vary per square based on how thickly you’re coating the mold, whether you end up using all the melted chocolate or not, etc. There are a lot of variables. So please err on the high side, but I don’t want to come between you and your macros. Much love.
Keto Peanut Butter Cups
Equipment
- Double Boiler
- Spoon
- Mold (I use a square silicone ice cube tray from Ikea)
Ingredients
- 1 bag Lily's Milk Chocolate Baking Chips
- 18 tsp Sugar Free Peanut Butter www.abitcookbookish.com/homemade-natural-peanut-butter
Instructions
- Set up and heat a double boiler.
- Add chocolate chips to the bowl of the double boiler.
- Stir to melt until smooth.
- Fill each cavity of the mold about half full.
- Using a spoon, push the chocolate up the sides of the mold, until completely coated.
- In the center of each mold, place two teaspoons of peanut butter.
- Top off each of the molds with chocolate until full and level.
- Place the filled mold in the fridge for at least 4 hours, but better overnight.
- When chocolate is completely cooled through, pop the chocolates out of the mold, place in a storage container and keep in the refrigerator until ready to eat.
